Mint flavored Baby potato fry

Mint flavored baby potato fry – No onion no garlic baby potato fry – Recipe with detailed step-by-step pictures.

We usually make baby potato curry by adding sambar powder in the traditional South Indian way. This one is a different and interesting one. Boiled baby potatoes marinated in mint-flavored chutney and pan-fried. This pairs well with roti and rice.

Baby potatoes are loved by kids and adults. The minty flavor gives a unique taste to the potato. You can pack this for kid’s lunch box too, along with roti or rice. You can use store-bought green chutney for marinating the potatoes.

If you don’t have baby potato, you can do this with normal potatoes too. Just boil them and cut them into cubes and proceed. Tips for boiling baby potato in a perfect way. I have given tips to pressure cook the potatoes perfectly in this post.

No onion garlic mint flavored baby potato curry

Ingredients

  • 20 baby potato
  • 1 tbsp oil
  • ½ tsp cumin seeds
  • 1 tsp kasoori methi
  • ¼ tsp pepper powder
  • 1 tbsp besan | gram flour
  • 1 tbsp rice flour
  • Salt as needed

To grind

  • ½ cup coriander leaves
  • ¼ cup mint leaves
  • 1 green chili
  • Little salt

Instructions

  • In a mixie jar grind the coriander leaves, mint leaves, little salt and 1 green chili into a fine paste.
  • Do not add much water.
  • Boil the baby potato and peel the skin and keep aside.
  • Now add the ground mint paste to this potato and add the rice flour and gram flour.
  • Mix well and let this marinate for 20 minutes.
  • In a pan add 1 tbsp of oil and add the cumin seeds.
  • Add the marinated baby potato to this.
  • Keep in medium flame and fry this for 10 minutes.
  • Add the kasoori methi and pepper powder.
  • Mix well and cook till you see tiny brown spots appear on the potatoes.
  • Switch off the stove.
  • Serve with rice or rotis.

Notes

1. You can marinate the baby potato with store bought green chutney too.
2. Mint flavored baby potato can be served as a starter too.
  • In a mixie jar grind the coriander leaves, mint leaves, little salt and 1 green chili into a fine paste.
  • Do not add much water.
  • Boil the baby potato and peel the skin and keep aside.
  • Tips to boil the baby potato perfectly.
  • Wash the baby potato and put this into a vessel. Do not add any water. Add water into the cooker and pressure cook for 4-5 whistles.
  • Since we are not adding water into the potato, it will not get over cooked.
  • Now add the ground mint paste to this potato and add the rice flour and gram flour.
  • Mix well and let this marinate for 20 minutes.
  • In a pan add 1 tbsp of oil and add the cumin seeds.
  • Add the marinated baby potato to this.
  • Keep in medium flame and fry this for 10 minutes.
  • Add the kasoori methi and pepper powder.
  • Mix well and cook till you see tiny brown spots appear on the potatoes.
  • Switch off the stove.
  • Serve with rice or rotis.
