Caramel Popcorn recipe

Caramel popcorn, home made caramel popcorn recipe, with step by step pictures, using dry corn kernels and sugar. Popcorn is the one we always enjoy during movies. When we were kids we used to get popcorns outside theaters in small packets and mostly i have tasted the salted version of popcorn. Later when the multiplex theaters started we used to get a variety of popcorn. Though i don’t prefer sweet version of popcorn my kids love the caramel popcorn. I have made caramel popcorn for them at home twice but never clicked the pictures to post the recipe. Yesterday while organising the kitchen shelfs found some little corn kernels and thought i will make the caramel popcorn for kids snack box. They loved it very much and packed few extra for their friends too. I have seen many adding roasted peanuts to this caramel popcorn, being a peanut lover i am too tempted to do this but i thought i will post a separate caramel peanut urundai or chikki recipe.

Caramel popcorn recipe

   Dry Corn kernels   1/4 cup  
   Butter 2 tblsp
   Oil  2 tsp
   Sugar  3/4 cup
   Water  2 tblsp
   Vanilla essence  1 tsp
   Salt  a pinch

Method :

  • In a wide pan add 1 tblsp butter and the oil. 
  • Once the butter is melted and it is hot add the corn kernels.
  • Mix it well to get coated into the oil and butter.
  • Add the salt.
  • Cover the vessel with a lid.
  • Keep the flame in medium.
  • Once you hear the popcorn pops up, bring the flame to low.
  • It will take 5-8 minutes for the entire corn to pop up. 
  • Once done, take it out from the pan.
  • This yielded around 4 cups of popcorn.
  • This is the basic pop corn. You can season with any flavor of your choice. 
  • Wipe the pan and add the sugar and 2 tblsp of water. 
  • Let the sugar melt and add the 1 tblsp butter to this. 
  • Once the sugar melts, do not disturb, it will change color and turn into amber colour.
  • The syrup will get thickened and gets a golden colour. 
  • Add the vanilla essence to this. 
  • I used raw sugar, you can use white sugar too.
  • Now we will add the popcorn. 
  • Mix well evenly.
  • Transfer it a plate.
  • Once this is completely cool, using your hands separate the pop corns.
  • Store this in a dry airtight container. 
Notes:

  1. You can add a pinch of baking soda to the sugar syrup to avoid cystalisation of sugar. But i didn’t add and it turned out well.
  2. Do no lessen the sugar, else it will not get coated evenly.
