Instructions
In a heavy bottomed pan add 3 cups of milk. Always use full cream milk for best results.
Boil the milk and once it is starts frothing up add a pinch of saffron to this.
Let the milk boil. Keep the flame low, stir continuously.
Once the milk has reduced to ¾ th switch off the flame.
Add 3-4 tblsp of sugar to this.
Mix well and allow this to cool completely.
Take out the skin of the oranges and remove the seeds and the white part.
We are going to use the flesh of the oranges and the juice we got while doing this.
I used small mandarin oranges, if using the kamala orange, use 1 big orange.
Once the milk is completely cooled, add the orange pieces to this.
Add sliced pistachios.
Serve chilled.
Notes
1. Always add the orange once the milk is cooled, else the kheer may be curdled
2. Adjust sugar as per the sweetness of the orange.
