Ingredients

  • 15-20 Seedless dates
  • 2 and 1/4 cup Milk
  • 5 Cashew nuts
  • 1 tsp Ghee

Instructions

  • Soak the dates in 1/4 cup of warm milk for 20 minutes.
  • Boil 2 cups of milk in a pan till it reduces a little less in volume.
  • Switch off the flame. Allow this to cool completely.
  • Keep this aside.
  • Grind the soaked dates into a smooth paste. You can add the soaked milk for grinding.
  • Now add the dates paste to the milk mixture.
  • Mix well and do not boil this.
  • Roast the cashew nuts in ghee and add it to the payasam. Switch off the flame.
  • Serve hot or chilled.
  • No need to add sugar to the payasam as the sweetness in the dates is very much enough.

Notes

1. I felt the payasam was a little sweeter, maybe the dates are too sweet. If you feel the dates are too sweet, either you add extra milk while boiling or lessen the number of dates.
2. You can add ghee roasted finely chopped dates along with cashew nuts.
3. I have tried adding dates paste to the hot milk and cooking for 2-3 mins on low flame.
4. But few of them told me it is getting curdled, so better to add it when the milk is cool or at least warm.
5. Ghee-roasted coconut bits can also be added to this dates payasam.
