Ingredients

thick aval I used red aval

urad dal
Few curry leaves

slit green chilis

peanuts

tbsp
chopped carrots
2
tbsp
chopped capsicum
2
finely chopped onions
1
tsp
lemon juice
1
tsp
turmeric powder
Coriander leaves few to garnish
Instructions
Wash and soak the red aval for 5-10 minutes. I used thick aval so I soaked it 10 minutes, to make it softer.
Meanwhile cut the veggies and keep everything ready.
In a pan add oil and add the mustard seeds, urad dal, curry leaves and slit green chili.
Let the urad dal turns slight golden brown, add the peanuts and roast this in low -medium flame for 2 minutes.
Now add the finely chopped onions and add little salt.
Saute till the onions becomes translucent.
Now add the finely chopped capsicum and carrot. You can add frozen peas also.
Add turmeric powder and salt.
Cook for 3-4 minutes. Let the veggies be crunchy.
Drain water from the soaked aval now.
Add this to the pan.
Cook for 2-3 minutes.
Switch off the flame and add the lemon juice.
Add finely chopped coriander leaves.
Mix well and serve hot.
Aval upma is ready.
Notes
1. Use thick or medium thick aval for making this upma.
2. Use Red poha | aval for a healthier version of aval upma.
