- 1 cup pineapple cubed
- 1 cup cucumber cubed
- 3 tbsp roasted peanuts crushed
- ½ tsp chili flakes
- ½ tsp soya sauce
- Salt to taste
Cube the pineapple and cucumber.( i used the Japanese cucumber)
If using the Indian cucumber, scoop out the seeds if you can peel off the skin too.
In a wide bowl, add the pineapple, cucumber, soya sauce and red chilli flakes.
Add little salt.
Crush the roasted peanuts in a mixer coarsely and add to the salad.
Mix well.
Serve immediately. If serving later, add the peanuts before serving.
Notes:
1. Add chili flakes as per your taste.
2. You can add finely chopped green chili instead of chili flakes.
3. Thai pineapple cucumber salad is a perfect crowd-pleaser.
