Thai pineapple cucumber salad

Ingredients

  • 1 cup pineapple cubed
  • 1 cup cucumber cubed
  • 3 tbsp roasted peanuts crushed
  • ½ tsp chili flakes
  • ½ tsp soya sauce
  • Salt to taste

Instructions

  • Cube the pineapple and cucumber.( i used the Japanese cucumber)
  • If using the Indian cucumber, scoop out the seeds if you can peel off the skin too.
  • In a wide bowl, add the pineapple, cucumber, soya sauce and red chilli flakes.
  • Add little salt.
  • Crush the roasted peanuts in a mixer coarsely and add to the salad.
  • Mix well.
  • Serve immediately. If serving later, add the peanuts before serving.

Notes

Notes:
1. Add chili flakes as per your taste.
2. You can add finely chopped green chili instead of chili flakes.
3. Thai pineapple cucumber salad is a perfect crowd-pleaser.
