Ingredients

  • 3 cups milk
  • 8 mini oranges
  • 4 tblsp sugar
  • Safforn a pinch
  • Pistachios for garnishing

Instructions

  • In a heavy bottomed pan add 3 cups of milk. Always use full cream milk for best results.
  • Boil the milk and once it is starts frothing up add a pinch of saffron to this.
  • Let the milk boil. Keep the flame low, stir continuously.
  • Once the milk has reduced to ¾ th switch off the flame.
  • Add 3-4 tblsp of sugar to this.
  • Mix well and allow this to cool completely.
  • Take out the skin of the oranges and remove the seeds and the white part.
  • We are going to use the flesh of the oranges and the juice we got while doing this.
  • I used small mandarin oranges, if using the kamala orange, use 1 big orange.
  • Once the milk is completely cooled, add the orange pieces to this.
  • Add sliced pistachios.
  • Serve chilled.

Notes

1. Always add the orange once the milk is cooled, else the kheer may be curdled
2. Adjust sugar as per the sweetness of the orange.
