Ingredients

  • 1 cup raw rice
  • ¾ cup Jaggery powder
  • ¾ cup coconut
  • 1/4 tsp Cardamom powder
  • Ghee to make dosa
  • Salt a pinch
  • 1 Big cucumber grated

Instructions

  • Soak the raw rice for 3 hours.
  • After 3 hours drain the water completely.
  • Grind this into a fine paste by adding jaggery, coconut and cardamom powder. I used 4 whole cardamom pods.
  • Use the grated cucumber water to grind this batter.
  • Before grating the cucumber just check the taste is not bitter.
  • Once the smooth paste is ready, add the grated cucumber to the batter.
  • Add a pinch of salt and mix well.
  • The batter will be in the consistency of regular dosa batter.
  • Heat a dosa tawa and start making dosas immediately.
  • Pour 2 ladles of batter on the hot tawa and spread like a dosa.
  • Do not spread very thin. Also, let it not be as thick as uttapam.
  • Drizzle ghee or oil on the sides.
  • Once one side is cooked, flip the dosa.
  • Cook for a minute and take out.
  • Repeat this for the rest of the batter.
  • Serve hot.

Notes

  1. You can store the batter in the fridge for 2 days. 2. Do not store more than 2 days after adding the cucumber, as it oozes out water.
