Ingredients

  • ½ cup rice flour
  • ½ cup jaggery
  • 1 and ¼ cup water
  • ¼ cup grated coconut
  • 1 tsp ghee + few for greasing
  • ¼ tsp cardamom powder
  • A pinch of salt

Instructions

  • In a pan add ½ cup of jaggery. Always powder the jaggery and measure for perfect measurements.
  • Add 1 and ¼ cup water to the pan.
  • Melt the jaggery and filter the impurities.
  • Add this back to the pan.
  • Now add ¼ cup grated coconut to this and ¼ tsp of cardamom powder and a pinch of salt as well.
  • If adding sesame seeds, dry roast 1 tbsp of sesame seeds and add to this.
  • Add 1 tsp of ghee
  • Allow this to boil.
  • Once it starts boiling, keep the flame low and add ½ cup rice flour.
  • I used store-bought rice flour. You can use idiyappam flour or homemade rice flour as well.
  • If using idiyappam flour do not add salt.
  • Mix well without any lumps.
  • Cook till the water completely evaporates.
  • Cover this and keep. Else it will become dry.
  • Once warm to handle, knead the dough well. You can grease your hands with ghee and knead the dough.
  • Make lemon sized balls and make this into pidi kozhukattais. Let your fingerprint come in the kozhukattais.
  • Steam for 8 minutes.
  • This will give a glossy look and its ready.

1.Do not boil the jaggery to a syrup consistency. Just let the jaggery melt.
• Water depends on the nature of the rice flour. I used store-bought rice flour.
