Drain the water from rice and make it into a paste. It should in the texture of rava.
Soak saffron in 2 tbsp warm milk.
In a heavy-bottomed pan add 3 cups of milk. You can use low-fat milk too.
Add the rice paste to this and mix well without any lumps.
Now switch on the flame and let this boil in medium flame for 15 minutes.
Ensure it should not stick to the bottom and get burnt.
Once the milk mixture thickens to a porridge consistency, add the saffron soaked milk and cardamom powder.
Mix well and switch off.
Once it is cool completely add the dates puree.
Mix well evenly.
Transfer to a serving bowl.
Garnish with sliced almonds.
Serve chilled always.
1. The sweetness was just perfect, if you want you can add little powdered jaggery while adding the dates puree.
2. Do not add the dates puree while the phirni is hot. It may curdle the milk mixture.
3. Dates phirni taste yum when served chilled.
