Ingredients

  • ½ cup Wheat flour
  • 1 tbsp Rice flour
  • 1 Banana
  • ¼ tsp Cardamom powder
  • ½ cup Jaggery
  • 1 tbsp Coconut
  • Water as needed
  • 1 tsp Ghee +as needed to make appams

Instructions

  • Take a broad vessel and combine the wheat flour, rice flour, and cardamom powder.
  •  Add this to the flour.
  •  In a pan, add the jaggery along with ¼ cup of water and boil till the jaggery melts.
  •  Filter the impurities.
  •  Take a broad vessel and combine the wheat flour, rice flour, coconut, and cardamom powder.
  •  Once it is warm, add this to the flour mixture.
  •  Mix it nicely.
  •  Peel the skin of the banana and puree this.
  •  Add this to the batter and mix well.
  •  Now add ½ cup of water or a little less to adjust the consistency.
  •  The consistency should be a slightly thick dosa batter consistency.
  •  If the batter is too thick, the paniyarams will come out hard.
  •  Add 1 tsp ghee and mix well. This gives softness to the paniyarams.
  •  Heat a paniyaram pan and add ghee in the holes.
  •  Pour the batter in all the holes.
  •  Cover and cook on medium flame.
  •  Once one side is cooked, flip on the other side.
  •  Drizzle a few drops of ghee.
  •  Cook for a few minutes.
  •  Take it out and repeat to finish the rest of the batter.
  •  Wheat appams are ready.

Notes

Adding a banana to this will make the appam very softer even if it is consumed after a few hours.
2. If you want coconut bits in this, you can add them instead of scrapped coconut.
3. Instead of banana you can add a pinch of cooking soda too.
4. Wheat appams can be deep-fried too.
