  • ½ tsp sugar

  • Salt as needed
  • ½ cup finely chopped coriander leaves

Instructions

  • Saute for a minute.
  • Add the finely chopped onions.
  • Saute for a minute.
  • Add salt to taste and cook the onion for a minute.
  • Now add in the sugar. Caramalised sugar enhances the taste of the fried rice.
  • Now add in the capsicum.
  • You can add veggies like carrot, cabbage too.
  • Saute in high flame for a minute.
  • Now add the soya sauce and mix well.
  • Add the cooked rice and mix gently and evenly.
  • I used basmati rice, you can use short grain rice too. Sona masoori rice will be perfect too.
  • Now add the finely chopped coriander leaves.
  • Mix well.
  • Switch off the flame.
  • Garlic coriander rice is ready.
  • You can serve with cauliflower curry or with a Manchurian gravy too.

Notes

1. Colored capsicum can be used to make the fried rice colorful.
2. You can add tomato ketchup and chili sauce after adding the soya sauce.
3. Ensure the rice is not cooked mushy and grains should be separate for a perfect Fried rice.
