Cluster beans stir fry

Ingredients

  • 500 gms cluster beans | kothavarangai
  • 2 tbsp oil
  • ½ tsp mustard seeds
  • 1 tsp turmeric powder
  • 2 and 1/2 tsp sambar powder
  • Salt as needed
  • Water to sprinkle

Instructions

  • Cut the cluster beans into 1-inch pieces.
  • In a pan add 1 tbsp of oil and add the mustard seeds.
  • Once it splutters, add the chopped cluster beans | kothavarangai.
  • Add salt and turmeric powder.
  • Mix well.
  • Sprinkle little water and cover this and cook for 10 minutes.
  • Stir in between. Let this get some nice brown spots on it.
  • A cast iron / iron pan works well for this.
  • Sprinkle water in between if it is dried up.
  • Now add the sambar powder to this.
  • Adjust the sambar powder as per your spice levels. But ensure that the cluster beans has little bit of sweetness.
  • Add 1 tbsp of oil at this stage.
  • Mix well and cook this for 10 minutes.
  • Cluster beans stir fry | Kothavarangai stir fry is ready.

Notes

1. You can replace sambar powder with 1 tsp of red chili powder and 1 tsp of coriander powder too.
