Wash and soak the basmati rice in 2 cups of water.
In a pan add 1 tsp of oil and saute the capsicum for 2 minutes and keep this aside.
Blanch the cauliflower and saute this for5 minutes. Add little salt and cook.
Keep this aside.
Since capsicum and cauliflower will become mushy if we pressure cook, we are cooking it separately.
Grind the green chili, ginger, mint leaves, coriander leaves, fennel seeds and turmeric powder into a fine paste.
You can add little water while grinding.
In a pressure cooker add the oil and ghee.
Add the ground paste to this.
Saute for 2 minutes.
Now add the mixed vegetables to this and mix well.
Cook for a minute.
Now add the soaked rice along with the water.
Add salt as needed.
Cover this and pressure cook for a whistle.
Keep in a low flame for 10 minutes and switch off the cooker.
Let the pressure naturally release.
Add the capsicum and cauliflower to this.
Gently mix this well.
Delicious no onion no garlic Veg biryani is ready.
Serve with a simple raita or a sabzi of your choice.
