Gajar ka halwa, carrot halwa recipe

Ingredients

  • 1 cup Carrot grated
  • 1 tblsp + 2 tsp ghee
  • ¾ cup milk
  • ½ cup sugar
  • ½ cup instant gulab jamun mix
  • Pistachios to garnish
  • Cardamom powder a pinch

Instructions

  • Grate the carrots. You can use the Delhi carrots available in this winter season.
  • In a pan add 2 tsp of ghee.
  • Add 1 cup of grated carrot and saute for 2 minutes.
  • Add ¾ cup of milk. For nice rich taste use full cream milk.
  • Let this carrot get cooked in the milk.
  • Keep the flame medium-low and stir it nicely.
  • Ensure it should not stick to the bottom of the pan.
  • Once the milk is almost evaporated add in ½ cup of sugar.
  • Mix well. After adding sugar the mixture loosens up.
  • Let the sugar gets dissolved completely.
  • Add in the instant gulab jamun mix to this.
  • Keep the flame low and stir it without any lumps.
  • The mixture will be thickened immediately.
  • Switch off the flame in a minute.
  • Add 1 tbsp of ghee to this.
  • Finally, add chopped pistachios.
  • Mix well and serve warm.
  • You can add thinly sliced almonds or ghee roasted cashew nuts also.

Notes

Instead of gulab jamun mix, milk powder can also be added but adjust the sugar as milk powder has sugar in that.
