Ingredients

Black urad dal

chana dal

Dhaniya | Coriander seeds
1
tsp
coconut

cloves
Garlic

red chili

Curry leaves few
Tamarind a small piece
Salt as needed
Asafoetida a small pinch
Instructions
In a pan add 2 tsp oil and add the black urad dal, chana dal, dhaniya, coconut, red chili, curry leaves, and garlic cloves.
Roast in medium flame till the dals get nicely roasted.
Switch off the flame.
Add salt and tamarind to this.
Let this cool completely.
Grind this into a fine paste using little water.
Take out from the mixie jar.
Ulundu thogayal goes well with plain rice smeared with ghee.
Also the thuvaiyal goes well with curd rice, idli, and dosa.
Notes
1. Always make the thuvaiyal using black urad dal, if not available use white urad dal.
