Wash and soak the rice for 15 minutes and pressure cook for 3 -4 whistles by adding 3/4 cup of water and little salt and few drops of oil.
Once the pressure is released, spread the rice in a plate and allow this to cool.
In a pan add oil and add the mustard seeds, urad dal, peanuts and chana dal.
Once the mustard splutters and the dal start golden brown, add the curry leaves and mint leaves.
Mix well and saute in a medium flame.
Now add the onions and cook till translucent.
Add little salt while cooking the onions.
Now add the finely chopped cabbage and capsicum to this.
Add the red chili powder, garam masala and salt to this.
Mix well and cook for 5 minutes.
Add the cooked rice to this.
Mix well gently without breaking the rice.
Once it well combined, switch off the flame.
Cabbage rice is ready.
You can pack this for lunch box or serve this at home too.
Notes
1. You can add green chilis instead of red chili powder.
2. You can add frozen peas instead of capsicum.
3. This cabbage rice serves for 2 people, if you are packing for kids lunch box, you can pack for 2 kids.
