Carrot rice recipe

Ingredients

  • 3 cups cooked basmati rice
  • 1 tbsp oil
  • ½ tsp cumin seeds
  • 1 onion
  • 1 cup grated carrot
  • 1-2 tsp red chili powder
  • ½ tsp garam masala
  • Salt as needed
  • Coriander leaves few

Instructions

  • I am using basmati rice for this recipe, you can use raw rice or par boiled rice too.
  • Spread the rice in a plate. Let this be in separate grains.
  • Add 1 tbsp of oil in a pan.
  • Add cumin seeds and add the chopped onions.
  • Saute till translucent.
  • Add the grated carrots.
  • Now add in the red chili powder, garam masala and salt.
  • Mix well and cook for 5 minutes.
  • Now add the cooked rice to this.
  • Mix well evenly.
  • Let this cook for a minute.
  • Switch off the flame
  • Garnish with chopped coriander leaves.
  • Carrot rice is ready.
  • You can pack this for lunch box or you can serve this at home too.

Notes

1. You can make carrot rice with basmati rice, sona masoori rice or par boiled ponni rice too.
2. Always ensure that the rice is cooked in separate grains and not mushy.
3. You can add ginger garlic paste after sauting the onions.
4. You can pair carrot rice with any spicy curry or with a dal tadka too.
