Ingredients

  • 2 cups strawberry puree
  • ¾ cup condensed milk
  • ¾ cup fresh cream
  • ¼ cup evaporated milk
  • 2 tbsp finely chopped fresh strawberries

Instructions

  • Puree the strawberries. I took some 45 plus small berries and pureed it.
  • Blend this into a smooth puree.
  • In a bowl add the strawberry puree, condensed milk, evaporated milk (if using) and fresh cream.
  • If you are not using evaporated milk add 1 cup of fresh cream.
  • But I highly recommend to use evaporated milk as it gives a very nice taste.
  • Blend everything in a mixie jar. If you want to use the electric beat this.
  • No need to beat till soft peak.
  • Transfer this to a box and keep this in the freezer for an hour.
  • After an hour take this out and blend this well in a mixie and put it back in the freezer for an hour.
  • Repeat this for 1-2 times.
  • Once it is done, before keeping it inside the freezer, add 2 tbsp finely chopped fresh strawberries to this and mix well.
  • This gives a nice taste when you have the ice cream.
  • Set this in the freezer for 8 hours or overnight.
  • Take out and keep this out for 5 minutes.
  • Dip the ice cream scooper in hot water and take out a scoop of ice cream from the box.
  • Enjoy it. We put it in a cone and enjoyed it.

Notes

Notes:
• I used the Amul fresh cream. Any brand of cream can be used.
• Condensed milk can be increased or decreased according to the sourness of the strawberry.
• Do not skip the step of blending the mixture every hour. This step will make smooth and soft ice cream.
• As I mentioned already, if evaporated milk is not available, just replace it with condensed milk.
• Homemade strawberry ice cream stays good in the freezer for a week.
