Choose just ripe mango. If it is over ripe, you can cut them into firm pieces.
Boil the sweet corn and take out the corn kernels. I used frozen corn.
Chop the onions and capsicum into fine pieces
Lets mix up the dressing. Mix all the ingredients given under
Balsamic vinegar gives a nice taste to the salad.
You can add this salad dressing to any salad.
Add the chopped mangoes, washed spinach leaves, onion, rajma, almonds, sweet corn, chopped capsicum, and coriander leaves in a wide bowl.
Pour the dressing over it.
Add salt.
Mix well evenly.
Mango salad is ready to serve.
Serve immediately.
You can replace rajma with chickpeas or any other legume of your choice.
You can add walnuts, pumpkin seeds and some flax seeds too.
