  • In a pan add 3 tsp oil.
  • Add the mustard seeds, urad dal and chana dal.
  • Once the mustard starts splutters, and the dal turns golden brown, add the chopped green chili and finely chopped curry leaves and coriander leaves.
  • Cook for a minute.
  • You can add 1 tsp of grated ginger too.
  • Now add 1 cup of samba wheat rava.
  • Add the fine samba wheat rava.
  • Roast this for 2 minutes.
  • Switch off the flame.
  • Allow this to cool completely.
  • Once it is cool, add salt and yogurt to this.
  • Mix well, add water to adjust the consistency.
  • Just before making add the eno fruit salt.
  • I haven’t substituted baking soda instead of eno fruit salt.
  • Mix well and pour the idli batter on greased idli moulds.
  • Steam this for 10-12 mins on medium flame.
  • Once done, leave it for 2 minutes and then take it out from the mould.
  • Serve hot with any chutney or sambar of your choice.
  • The sambar wheat idli stays soft for 3-4 hours too.

1. Use fine broken rava for making this broken idli, else the idli will not hold it’s shape.
2. Do not rest the batter after adding the eno salt, make the broken wheat idlis, immediately
