Mint flavoured baby potato fry

Ingredients

baby potato

oil

cumin seeds

kasoori methi

pepper powder

besan | gram flour

tbsp
rice flour
Salt as needed
To grind
½
cup
coriander leaves
¼
cup
mint leaves
1
green chili
Little salt
Instructions
In a mixie jar grind the coriander leaves, mint leaves, little salt and 1 green chili into a fine paste.
Do not add much water.
Boil the baby potato and peel the skin and keep aside.
Now add the ground mint paste to this potato and add the rice flour and gram flour.
Mix well and let this marinate for 20 minutes.
In a pan add 1 tbsp of oil and add the cumin seeds.
Add the marinated baby potato to this.
Keep in medium flame and fry this for 10 minutes.
Add the kasoori methi and pepper powder.
Mix well and cook till you see tiny brown spots appear on the potatoes.
Switch off the stove.
Serve with rice or rotis.
Notes
1. You can marinate the baby potato with store bought green chutney too.
2. Mint flavored baby potato can be served as a starter too.
