Water and soak horse gram in water for 5 hours or overnight.
Change the water and add a little salt.
Pressure cook for 3-4 whistles.
Meanwhile let's make the dough.
In a wide bowl add 2 cups of whole wheat flour and a little salt.
Add water little by little and knead into a pliable dough.
Add 2 tsp of oil and make a non-sticky dough.
Cover it and keep it aside for 15 minutes.
Make equal lemon-sized balls and keep them aside.
Now the horse gram is cooked well, let’s take it out from the pressure cooker, once the pressure is released.
Drain the water. You can use the water to make rasam or you can add a little pepper powder and drink it as a soup.
Transfer the cooked horse gram to a mixie jar.
Add chili, garlic, and coriander leaves to this and grind into a paste.
Transfer this to a bowl.
Add red chili powder, garam masala powder, and a little salt.
Now add 1 finely chopped onions to this.
Mix everything nicely.
Divide into equal lemon-sized balls.
I got 7 portions of the filling and 8 portions of the dough.
Take one ball of dough, dust it with dry flour.
Roll it into a small disc and place one portion of the filling in the center.
Cover it well
Dust with some dry flour and roll into a paratha.
Transfer it to a hot tawa.
Cook on both sides.
Smear ghee on both sides.
You can use oil for a vegan version too.
Repeat the same for the rest of the dough and filling.
Serve hot with pickle or raita.
