Potato paal kootu recipe

Easy and yummy potato paal kootu recipe, pairs well with kuska, chapati, poori and dosa

Ingredients

  • 2 cups boiled and cubed potatoes
  • ¼ cup frozen peas
  • 3 tsp oil
  • 1 bay leaf
  • 1 finely chopped onion
  • 1 tbsp ginger garlic paste
  • ½ portion tomato
  • Few curry leaves
  • 2 slit green chili
  • 1 cup water
  • Salt as needed
  • Few coriander leaves

To grind

  • ¼ cup coconut
  • 1 tsp fennel seeds
  • 7-10 cashew nuts
  • 1 green chili
  • ¼ cup water

Instructions

  • In a mixie jar add the coconut, fennel seeds, cashew nuts and green chili.
  • Grind this into a fine paste by adding water.
  • In a pan add the oil and add the bay leaf. You can add a small piece of cinnamon, 2 cloves, a cardamom to this.
  • Add the slit green chili and curry leaves
  • Saute for few seconds and add the finely chopped onions.
  • Add little salt and saute till translucent. Do not change the color.
  • Now add the ginger garlic paste and cook for a minute.
  • Add in the chopped tomato and cook for a minute.
  • Add the green peas now. I have added frozen green peas, you can add fresh peas too.
  • If adding fresh peas, boil this separately and then add.
  • Saute for a minute.
  • Now add the boiled potato.
  • Mix well.
  • Add the ground coconut paste to this.
  • Now add in 1 cup of water.
  • Mix well and add salt.
  • Cover this and cook for 3 minutes.
  • Once done, switch off the flame.
  • Garnish with coriander leaves.

Notes

1. You can add 2 tbsp of milk towards the end and switch off the stove.
