Soak basmati rice in 2 cups water for 10 mins
Grind ¼ cup mint leaves, ¼ cup coriander leaves, few curry leaves and 2 green chili into a fine paste.
In a pressure cooker add ½ tblsp oil and 2 tsp ghee
Add 2 sliced onions and add little salt.
Saute till the onions become soft.
Add grind paste the cooker.
Saute for a minute.
Add ¼ cup of green peas, if using.
Mix well and add salt.
Add 1 tsp of garam masala.
Add in the soaked rice along with the water.
Mix well.
Cover the cooker.
Pressure cook for 2 whistles.
Switch off.
Once the pressure subsides, open the cooker.
Gently mix the pulao, without mashing it.
Pudina pulao is ready.
