  • 4 tbsp Black urad dal
  • 1 tsp chana dal
  • 1 tsp Dhaniya | Coriander seeds
  • 1 tsp coconut
  • 4 cloves Garlic
  • 6 red chili
  • 2 tsp oil
  • Curry leaves few
  • Tamarind a small piece
  • Salt as needed
  • Asafoetida a small pinch


  • In a pan add 2 tsp oil and add the black urad dal, chana dal, dhaniya, coconut, red chili, curry leaves, and garlic cloves.
  • Roast in medium flame till the dals get nicely roasted.
  • Switch off the flame.
  • Add salt and tamarind to this.
  • Let this cool completely.
  • Grind this into a fine paste using little water.
  • Take out from the mixie jar.
  • Ulundu thogayal goes well with plain rice smeared with ghee.
  • Also the thuvaiyal goes well with curd rice, idli, and dosa.


1. Always make the thuvaiyal using black urad dal, if not available use white urad dal.
