Ingredients

  • ½ cup Sprouts
  • 2 cups cooked rice
  • 1 tbsp oil
  • 2 tbsp finely chopped garlic
  • 3 tbsp spring onion whites
  • 2 slit green chili
  • ¼ cup capsicum finely chopped
  • 2 tbsp Spring onion greens
  • Salt as needed
  • ½ tsp sugar
  • Salt as needed
  • 1 tsp pepper powder

Instructions

  • In a pan add oil and add the spring onion whites and finely chopped garlic. I love more addition of garlic to fried rice, so added more.
  • Add a little salt to this.
  • Add the green chili, and sugar and saute them till the garlic turns nice golden color.
  • Caramelisation of sugar enhances the taste of fried rice.
  • Now add the capsicum and green moong sprouts. I used homemade sprouts, the recipe is available on my website.
  • Saute in high flame for a minute and add the cooked rice.
  • I used basmati rice, you can use any short-grained rice too.
  • Add the pepper powder and spring onion greens.
  • Mix well gently, check for salt.
  • If you want to add soya sauce add 1 tsp of soya sauce, while adding the green chili.
  • Healthy Sprouts fried rice is ready to serve.
  • Serve with simple tomato ketchup.

Notes:
1. If you have cooked rice and moong sprouts at home, this Sprouts fried rice can be made in a jiffy.
2. You can add finely chopped cabbage or frozen sweet corn while adding the sprouts.
3. You can use cooked millet instead of cooked rice and make Millets Sprouts fried rice.
