Vegetable Sandwich recipe

Ingredients

For the vegetable masala

  • 3 tsp oil
  • 2 tbsp chopped garlic
  • 2 finely chopped onions
  • 1 green chili
  • ¼ cup finely chopped carrot
  • ¼ cup finely chopped cabbage
  • ¼ cup finely chopped capsicum
  • ¼ cup finely chopped cauliflower
  • 1 cup boiled and mashed potato
  • 1 tsp red chili powder
  • ½ tsp garam masala
  • Salt as needed
  • Few slices cucumber sliced into roundels
  • 1 tsp chaat masala
  • You can add peas sweet corn and finely chopped broccoli and baby corn too.

Instructions

  • In a pan add oil and add the chopped garlic and chili.
  • Saute this for a minute and add the onions.
  • Add a little salt and saute this till translucent.
  • Now add in the carrot, cabbage, cauliflower and capsicum.
  • Saute this for a minute.
  • Add salt, red chili powder, and garam masala.
  • Now add the mashed potato.
  • Mix well and cook for 2-3 minutes.
  • Switch off the flame.
  • If needed you can add lemon juice just after switching off the flame.
  • The sandwich filling is ready. The same filling can be used for making mixed veg paratha too.
  • Take a slice of bread and apply green chutney on one side.
  • You can use ketchup or chili sauce too if you want.
  • Spread the filling on it.
  • Place 4-5 sliced cucumbers on it. This is optional but it gives a nice taste.
  • Sprinkle 2 pinches of chaat masala on the top.
  • Take another slice of bread and apply green chutney. You can apply tomato ketchup or sweet chutney too.
  • Place it on the top of the filling spread bread.
  • Add little butter to a pan.
  • Place the sandwich on it.
  • Toast on 2 sides until golden brown.
  • Add a little more butter while toasting.
  • Alternatively, you can toast this on a sandwich maker too.
  • Repeat the same for the rest of the bread and filling.
  • Vegetable Tawa sandwich is ready.
  • You can cut them into 2 and serve this.

Notes

1. You can use sweet corn, peas, baby corn, and broccoli also.
2. Potato can be replaced with sweet potato.
3. Cheese slice or grated cheese can be added to the top of the cucumber.
4. You can use white bread or wheat bread for making this Veg Tawa sandwich.
