Chocolate muffins recipe – No egg no butter vegan chocolate chip muffin recipe -with step-by-step pictures.

I have bookmarked this recipe of chocolate muffins from Here a long time back. It is a very easy and simple recipe and I was waiting for an occasion to make this yesterday I finally made these chocolate muffins for my daughter Varsha’s birthday and the muffins turned out very soft and moist and the addition of Orange juice adds up an exotic flavor to the muffins.

Eggless chocolate muffin recipe

Ingredients

  • 1 and 1/2 cup all purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • ¾ cup sugar
  • ½ cup oil
  • ½ cup orange juice
  • ½ cup cold water
  • 1 tsp vanila essence
  • 2 tsp lemon juice
  • 2 tbsp choco chips optional

Instructions

  • Sift the flour, cocoa powder, and baking soda for even mixing.
  • Keep it in a wide bowl after sifting.
  • In another bowl, add the oil, cold water, orange juice, vanilla essence, and lemon juice, and add the sugar and mix gently till the sugar dissolves.
  • When done, slowly transfer the wet mixture to the sifted flour and mix gently without any lumps.
  • If adding chocolate chips add at this stage.
  • Preheat the oven to 180 degrees C and arrange the muffin tray with muffin liners.
  • Spoon the batter and bake for 12- 15 minutes.
  • Mine got done in 12 minutes.
  • Check with a clean toothpick by inserting it in the middle of the muffin whether it is done or not. If it comes out clean then take it out and cool it on a wire rack and if not just bake it for a minute or two.

Notes

  1. The original recipe is for a cake recipe so you can try a cake also.
 
2. Do not replace baking soda with baking powder, both are not the same and the result will not be the same.
3• I used Hershey's unsweetened cocoa powder for making this eggless chocolate muffin.
  • Sift the flour, cocoa powder, and baking soda for even mixing.

Hai Jeyashri,the muffins look yummilicious.Do we need a beater for folding the ingredients together.I never get the cakes or muffins soft and fluffy.I am wondering if the plain flour am using from ntuc is the problem.i buy the ordinary plain flour pagoda brand.the cookies are turning out good though.Appreciate if you could point out the mistake.

    I tried both muffins and nutella brownies.Everything was to the point.It turned out very soft, fluffy and moist.However it tasted gooey or dough uncooked..but when I inserted the toothpick it came out clean.The baking time and everything was perfect.I was delighted to see how soft it turned out but disappointed as I have no clue what I am doing wrong here.More like a Malaysian sweet I have seen here with glutinous rice…Please don help me out.Appreciate your time and advice.

    • Yes everything was right though I am concerned abt the measurements.I used a cup that holds 200ml water for 1 cup flour.Perhaps that was the problem?
