Easy vegetable pulao

Easy Vegetable pulao is a very simple recipe and can be made in a jiffy It is cooked with mild spices and tastes well with any north Indian gravy. This pulao is packed with vegetables and is perfect for a lunch box too. Check out my baby corn pulao, palak pulao, Millet veg pulao recipe.

Ingredients

  • 1 cup basmati rice
  • 2 cloves
  • 1 cardamom
  • ½ tsp cumin seeds
  • 1 carrot
  • 10 beans
  • 1 potato
  • ¼ cup frozen peas
  • 1 onion
  • 2 green chili
  • 2 tbsp oil
  • 2 tsp ghee
  • Salt as needed
  • Water to cook the rice

Instructions

  • Soak basmati rice in 1 and 1/ 4 cups of water. Cut the vegetables except peas into tiny pieces. Cut the onions into long thin stripes.
  • Heat oil and ghee in a pressure cooker and add cumin seeds and all the spices one by one.
  • When it splutters and gives a nice aroma add the chillies and onions. Fry till the onions turn brown.
  • Be careful that it does not get burnt. Then add the chopped vegetables and saute for a few minutes.
  • Then add the soaked rice keeping the water aside. Fry this for 2 mins.
  • Then add the water which is used for soaking the rice. Add salt as per your taste. When the water starts boiling, close the lid of the pressure cooker and cook till 2 whistles.
  • Switch off.
  • Once the pressure is released open and fluff the rice.
  • Enjoy with dal tadka or raita or any gravy of your choice.

Notes

  1. If you do not like the whole spices coming in between while eating, add 1 tsp of garam masala while sauting the vegetables.
  2. Vegetable pulao can be served with dal taka

    I really like all your recipes & trying them one by one. today I made this pulavo . the rice was not cooked completely. what could have been the mistake. How can I correct it.

    • Thanks for the feedback Raguraman. coming to your query, either the water must be less . Always keep the cooker in medium flame for the whistle to come. If it is in high flame, whistles will come fast but rice will not be cooked.
      Just sprinkle somewater and keep it covered in the pressure and put that in a small flame for 5 minutes. It will be done
